This really is a fascinating and unique workshop where you actually make gin just like the big distilleries do. The style of gin we will be making will be something like a London Dry gin. It is totally possible to create a gin that tastes just like Beefeater, or Tanqueray using this method, although getting the recipe right can prove to be a little more tricky! Obviously our stills are a lot smaller, and we are doing this on a smaller scale, but the process is the same.

Each person gets to operate their own copper pot alembic still, for which we will guide you every step of the way on how to use the still to create a quality spirit. There are precision scales to use, botanical recipe guides, chemistry beakers and specific gravity hydrometers to measure alcohol content. You will get to choose your own botanicals from the selection in front of you, and using a guide recipe you will create your own recipe of what you think will taste great.

Some of the botanicals that will be on display will include: Juniper berries from Ibiza, Angelica Root, Orris Root, Cinnamon, Cardamom, Pink Pepper, Black Pepper, Chamomile, Hibiscus Flowers, Rose Petals, Lavender, Rosemary, Frigola, and Fennel to name a few.

Finally once you have written out your gin recipe, you get to select and weigh out your botanicals, and add them to the still along with the neutral spirit. After sealing everything and switching on the element you will see the temperature on the thermometer rise, and eventually your gin distillate will come out the other end. This stuff is highly fragrant, and highly alcoholic – around 80%. Its amazing to try the fresh gin coming direct off the still.

Finally when the distillation is complete, you get to blend your cuts together, add water to bring it down to your desired drinking strength. Then its into the bottle, add a label, wax seal the cork, and then you can show it off to your family and friends.
